Abstract:

Puratos is an international group offering a full range of innovative products, raw materials and application expertise to the bakery, patisserie and chocolate sectors.

Puratos services are available in over 100 countries around the world with more than four hundred people dedicated to research and development.

Bread is one of the most common, relatively low cost, traditional foods around the world. Yet bread actually has close links with biotechnology, being enzymes the common denominator .

Due to the changes in the industry and the increasing demand for more natural products, enzymes have gained real importance in bread formulations. New and rapid advances in biotechnology tools have made new enzymes available to the baking industry.

The Enzymes Research and Development team in Puratos is dedicated to innovating and differentiating the products though enzymes research. In collaboration with internal and external partners, the team covers the entire biotechnological process of obtaining industrial enzymes from early stage to industrial production.

Data analysis, statistics methods , and bioinformatics tools are also key process to continue our innovation in the enzymatic field. We are on the path of incorporating systems associated with data management, analytics, and predictive models that allows us to accelerate the entire life cycle of enzymes research and development.

 

Biography:

Nefertiti is a Senior Research Manager at Puratos, where she leads the Enzymes research and development team and also oversees the enzymes’ innovation strategy. Nefer has more than 15 years’ experience in research, development, and innovation in biotechnology. Over the years, she has developed her professional career in the Healthcare and Food sectors.

She nurtures a keen interest in designing and implementing new research and innovation strategies including data management, business intelligence, analytic tools, design thinking among others.

Nefer holds a Ph.D. in Biotechnology a Master in molecular biology both from the University of Barcelona an MBA in management and international negotiations from UNED Costa Rica and a Master in Business Intelligence from EAE Business school Barcelona.

Her deep interest in knowledge sharing has allowed her to work with multi-cultural and cross-functional teams in Europe, Latin-America, and Asia-Pacific.
