The overarching aim of my PhD project is to explore the bio efficacy and consumer acceptability of vitamin D biofortified hens eggs for human health. 

My Supervisors are Dr Tom Hill (Institute of Cellular Medicine), Professor Ilias Kyriazakis, Dr Sharron Kuznesof and Mr Mike Dickinson (Senior Analytical Chemist at Fera Science Limited).

My PhD involves three overlapping work packages which span the interface of animal and human nutrition as follows:

  • To investigate the effect of vitamin D biofortified egg consumption on vitamin D status and musculoskeletal health
  • To develop sensitive liquid chromatography tandem mass spectrometry methods for the quantitative determination of vitamin D in egg and human serum
  • To examine consumer attitudes towards vitamin D biofortified eggs.
