Aims

To outline the challenges involved with food processing, including handling powders and complex fluids, and preventing contamination and maintaining a sanitary process.

Outline Of Syllabus

The module will cover rheology and handling of complex fluids, e.g., emulsions (such as mayonnaise) and suspensions (such as peanut butter). This includes an examination of the interaction forces within these fluids. Other food products/ingredients include powders (e.g., flours and sugars), the module will therefore cover particle properties such as size and strength. Problems of powder handling such as segregation and poor flowability will be outlined, including how to design a hopper to ensure reliable flow, taking account of the stresses in the powder bed. The causes of contamination, cleaning practices and guidelines for hygienic equipment design will also be discussed.

2.       Demonstrate how formulations can be manipulated to control product properties
3.       Explain powder handling problems in terms of particle properties
4. Evaluate process designs in terms of hygiene and potential for contamination
